Title:  Senior Production Manager

Job Description

The Senior Production Manager is responsible for overseeing the day-to-day operations of airline catering production, ensuring meals and related services are prepared, packed, and delivered on time and according to airline specifications. This role manages kitchen staff, ensures compliance with food safety and aviation security standards, and coordinates with logistics and ramp teams to meet flight schedules.

Job Responsibilities

• Oversee the production and assembly of airline meals, beverages, and catering supplies according to airline specifications.
• Manage production staff scheduling, training, and performance to ensure efficient operations.
• Ensure compliance with airline service standards, food safety regulations (HACCP, CFIA/FAA guidelines), and aviation security protocols.
• Monitor inventory levels of food, beverages, and equipment; coordinate with purchasing and warehouse teams.
• Maintain quality control of all meals, ensuring consistency, proper labeling, and presentation.
• Collaborate with operations/logistics teams to meet strict flight departure deadlines.
• Implement and enforce standard operating procedures to maximize efficiency and reduce waste.
• Track production costs and support budget management.
• Serve as the point of contact with airline representatives for catering operations.
• Troubleshoot operational issues quickly to minimize service disruptions.

Qualifications

• 3–5 years of management experience in airline catering, food production, or high-volume food service.
• Strong knowledge of food safety, HACCP, and occupational health & safety regulations.
• Experience managing diverse teams in a high-volume environment an asset.
• Excellent organizational and problem-solving skills with ability to work under pressure.
• Strong leadership and communication skills.
• Flexibility to work irregular hours, including nights, weekends, and holidays, to meet airline schedules.
