Job Description
This skilled and specialized work requires a knowledge and background of Kosher food preparation. Must maintain all ARAMARK, State and Federal food handling, safety and sanitation standards. Must adhere to the highest standards of customer service. Must adhere to the uniform standards at all times. Must have good personal hygiene.
Job Responsibilities

- Train and manage kitchen personnel and supervise/coordinate all related culinary activities.
- Estimate food consumption and requisition and the purchase of food.
- Operates to meet/exceed Aramark Safe Food Handling standards.
- Daily supervision of assigned production staff, enforcing company and unit guidelines for safety, procedure and presentation.
- Completes monthly inventory process
- Timely input of pre & post costing information
- Yearly provides listing of Jewish High Holy days impacting operational schedule
- Active participant as assigned with the understanding of no direct involvement in preparation or service of food other than at Kosher station
- Select and develop recipes as well as standardize production recipes to ensure consistent quality
- Assist in the creation & implementation of a fiscally sound (4) week cycle menu
- Establish and maintain sanitation and organization standards for Kosher kitchen
- Responsible for disciplinary actions as warranted for assigned Kosher kitchen staff
- Establish presentation technique and quality standards, and plan and price menus.
- Ensure proper equipment operation/maintenance and ensures proper safety and sanitation in kitchen.
- Oversee special catering events and may also offer culinary instruction and/or demonstrates culinary techniques.
Qualifications
SPECIAL REQUIREMENTS: Depending on task being performed, personal protective equipment and equipment to prevent food contamination will be required. These include but are not limited to the use of hair restraints, protective hand and eyewear, etc. Must have slip resistant shoes.

- Must be a qualified Mashgiach and meet the criteria of Hartford Kashrut Commission.
- Must have working knowledge and hands on Mashgiach experience.
- Must fully observe Jewish law and customs as defined by orthodox Judaism and trained in the field of Kashrut.
- Requires advanced knowledge of the principles and practices within the food profession.
- Must be able to follow specific Aramark procedures to ensure proper techniques and consistency of items at all times.
- Must ensure a safe and healthy atmosphere by observing Aramark federal, state, and local policies and procedures at all times
- Must be able to lift items up to 50-75 pounds
- Must be familiar with and be able to operate all equipment.
- Must have able to interact with customers and provide exceptional customer service.
ENVIRONMENTAL FACTORS/OCCUPATIONAL EXPOSURES: Work involves moderate exposure to unusual elements, such as extreme temperatures, rain, snow, humidity, dirt, dust, fumes, smoke, unpleasant odors, and or loud noises.
REQUIRED MINIMUM TRAINING AND EXPERIENCE: Requires the equivalent of 2-3 years of post-high school education, preferably a culinary degree, and 2-3 years in a related position with this company other organization(s).
REQUIRED KNOWLEDGE, SKILLS AND ABILITIES: Ability to read, write, complete basic math skills and has a comprehension of measurement; ability to understand and follow oral and written instructions. Must successfully complete SAFE Food Handler Annual training. Ability to communicate effectively, interact well with people of all ages and diverse backgrounds and management skills to direct people and/or solve problems.
