Job Description

The Kitchen Manager at Lansing Correctional is a management position responsible for developing and implementing dining solutions to meet customer needs and tastes. Oversees and manages dining operations where customers order prepared foods from a menu.

Job Responsibilities

Responsibilities include all aspects of food production, food safety, and all other activities which support food quality and Aramark’s Operational Excellence Food Management Process. Reporting to the Food Service Director, you’ll take a hands-on approach in focusing on training kitchen staff, Aramark Safe protocols, and client relations. Our Kitchen Manager will also play a key role in helping us meet Food Cost and Labor budget requirements, while managing daily food production minimizing over-production and limiting Food Waste.   

 

This role works with each location’s food service personnel to improve preparation techniques, menu management, purchasing controls, food presentation, diets and other food related activities.  

 

This role interacts and supports all aspects of In2Work should it apply in the facility working on that day. Deliver strong operational performance by executing against Aramark’s and regulatory agency standards and programs, continually monitor operations, and completing assessments and necessary action plans to provide optimal food quality and meal service.

  • Train and manage kitchen personnel and supervise/coordinate all related culinary activities  
  • Estimate food consumption and requisition or purchase food  
  • Execute menu and recipes to ensure consistent quality  
  • Establish food presentation technique and quality standards.   
  • Ensure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen  
  • Oversee special catering events and may also offer culinary instruction and/or demonstrates culinary techniques

Qualifications

  • Requires 2-3 years of experience in a related position   
  • Requires 2-3 years of post-high school education or equivalent experience  
  • Culinary degree preferred  
  • Requires current Serve-safe certificate; bonus Trainer’s Certification 
  • Requires advanced knowledge of food production and labor management 
  • Requires experiential knowledge of management of people and/or problems  
  • Working knowledge of all Microsoft Office applications 
  • Requires oral, reading and written communication skills 
  • Works all shifts and days if necessary: days, nights, weekends, holidays 
  • Systems: Prima Web, Kronos, Birch St, Insights Dashboard, among others
