As we continue to grow, we are looking for an experienced hands-on Head of Hotels F&B to join our team at Legoland, Windsor. This role is responsible for the daily management of all of the Food and Beverage outlets across 3 hotel restaurants and bars and our corporate event space, ensuring that the highest standards of food and beverage service are provided to our guests.

We are recruiting this role on a full time (40 hour) permanent basis. The role will involve working weekends.

A day in the life of a Head of Food & Beverage:

  • To enforce, support and coach the food and beverage management team on the Food Safety Policy’s to ensure full compliance with Health & Safety legislation, including food hygiene.
  • To fulfil Hotel 30 Duty role on working days.
  • Ensure all Food Safety/H&S audits (internal & external) are completed and passed to company standard.
  • Team member re-deployment throughout the operation to ensure high levels of productivity vs visitor volume.
  • To uphold the uniform policy throughout the food and beverage Department.
  • The development and delivery of the F&B strategy in conjunction with the Head of F&B. To include leading the Food and Beverage development across the site through proposition and people.
  • To drive a department focussed on exceptional guest experience achieving all food KPI targets.
  • To work alongside the Head of F&B to achieve the F&B budget revenue and MC target.
  • Support the Head of F&B in order to drive the strategic direction of the department.
  • Monitor and report back on sales mix & trends to review and adapt our current food offering across the resort.
  • Support the administration team to ensure all EPOS systems are set up correctly with menu items and promotions.
  • Monitor and review theoretical cost of sales reports and analyse and anticipate sales trends to maximise RPC.
  • Ensure cost control & profit protection is embedded by best practice and proactive initiatives.
  • Identify short and long term objectives for improving the operation, showing detailed knowledge of overall business objectives.

You’ll be set up for success if you have:

  • Large-scale food and beverage operations experience is essential
  • High-end resort hotel or venue experience is highly desirable
  • Current experience as a Senior Food & Beverage Manager, Assistant Director of F&B or Hotel Operations Manager is preferable
  • A self-motivated, driven, guest-orientated and proactive attitude is also required
  • The ability to prioritise activities, communicate, plan your time and co-ordinate F&B operations across multiple outlets is required
  • Proven, successful people management and leadership experience is essential
  • Have a solid understanding of health and safety cultures and the ability to train out policies and procedures
