Aramark UK is currently recruiting a Food & Beverage Control Manager to join the UK business specifically aligned to our Merlin Entertainments contract. Reporting to our Merlin Head of Finance, your primary responsibility will be to manage and control routine food and beverage operations through close management of our bespoke operating system.

This is a crucial role which will involve updating and maintaining our bespoke the OpX system with accurate and relevant information, ensuring compliance with legal requirements related to allergen and nutrition information, and driving consistency and compliance across the Merlin operation. Additionally, the Food and Beverage Control Manager is responsible for analysing and improving GP margins and maintaining smooth integration between the IT POS systems and back-of-house systems.

A day in the life of a F&B Control Manager

  • Updating OpX (our bespoke F&B operating system) with relevant and accurate information
  • Ensuring OpX fairly and accurately reports to the margins of food and drink in the operation reflecting real time pricing in the market place, with system information
  • Ensuring we stay fully compliant with all Allergen information to comply with legal requirements
  • Ensuring we stay fully compliant with all nutrition information to comply with legal requirements around calorific values on menus and signage
  • Driving discipline in consistency and compliancy across the Merlin operation to prevent ‘rogue’ items appearing in the system. When we have commonality of product, this needs to be a one option choice.
  • Creation of central ‘build sheets’ for all parties to coordinate detail surrounding the sales of food and drink in the Merlin contract
  • Identify and offer solutions to GP margin improvement through understanding of the real time operation and data sources such as OpX and Aratrade
  • To feed information to the operation that allows the business operators to drive margin improvement.
  • Providing good and relevant data to the operators and business leaders with the objective of managing margin more proficiently
  • Offering advice and support with new menu costing for both food and drink, supporting through the information provided by market sources and organisation operating systems.
  • Acting as a conduit for food and beverage control between our IT POS systems and back of house systems such as OpX to ensure a smooth, efficient and accurate transition to the guest facing ‘tills’.
  • Needs to ensure all discounting and various merlin benefits
  • Housekeeper of the OpX system for Merlin business, ensuring it stays current and accurate as well as aligned to all system updates

You'll be set up for success if you have:

  • Previous experience in food and beverage control or similar role is required
  • Strong understanding of food and beverage cost control, GP margin improvement, and menu costing
  • Ability to build cross functional relationships
  • Strong administration and data management skills
  • Financially astute and able to interpret financial information
  • Knowledge of relevant legal requirements related to allergen and nutrition information
  • Proficiency in utilising data sources and systems for analysis and improvement
  • Excellent communication and problem-solving skills
  • High attention to detail and a commitment to accuracy
  • Ability to work in a fast-paced, dynamic environment
