Be a part of the Canada Games! Lighthouse Hospitality, provided by Aramark, is hiring temporary Lead Cooks (Cook 2) to help provide food services to athletes staying in the athlete’s village. 

The Cook 2 (Lead Cook) reports directly to the Manager/Chef on duty in regards to the timely preparation, and presentation of food to our clients on a daily basis. The Lead Cook (Cook 2) is responsible for cooking and preparing food using standard recipes and production guidelines while following food safety, food handling, and sanitation procedures. The individual in this role should safely handle knives and equipment including grills, fryers, ovens, broilers, etc. The Lead Cook may supervise employees and delegate responsibilities. Daily activities are performed according to written or oral instructions/recipes.  Food must be of superior quality, and prepared in a timely manner.

Lead Cooks (Cook 2) must be very customer oriented and able to multi-task in a fast paced environment and problem solve (or escalate) service issues as they arise.  All cooks are expected to set a good example of reliability, punctuality, attendance, and grooming and maintain high standards of quality in food production, sanitation, and kitchen safety practices.

 

This is a temporary position for the Canada Games. Applicants need to be available for mandatory orientation on July 31st, 9am - 5pm and a variety of shifts (early morning, day time, evening, late night and weekends) as required fom August 8th to August 25th. 

 

 

 

Job Responsibilities

  • Schedules and assigns daily work activities to staff and supervises the completion of tasks.
  • Trains and guides staff on job duties, standard food safety and sanitation procedures, cooking methods, etc.
  • Cooks and prepares food following production guidelines and standardized recipes
  • Sets up workstation with all needed ingredients and equipment
  • Prepares ingredients by measuring, weighing, mixing, chopping, trimming, and peeling food items
  • Safely uses all food utensils including knives
  • Operates equipment such as ovens, stoves, slicers, mixers, etc.
  • Bakes, roasts, broils, steams, and uses a variety of cooking methods on meats, vegetables, and other foods
  • Arranges, garnishes, and portions food following established guidelines
  • Properly stores food by following food safety policies and procedures
  • Cleans and sanitizes work areas, equipment, and utensils
  • Maintains excellent customer service with a positive attitude towards guests, customers, clients, co-workers, etc.
  • Follows Aramark safety policies and procedures including food safety and sanitation
  • Ensures security of company assets
  • Produces and maintains work schedules and may prepare production records.
  • Must be able to maintain reliable attendance, and work in different areas of the operation as required.
  • Capable of intermittent physical tasks; standing, walking, bending, crouching, pushing, pulling, carrying, reaching about, lifting and lowering, and able to complete repetitive motion tasks of the hand, wrist, and elbow, withstand heat and cold of the kitchen facility.
  • Lifting requirements for this position are moderate (ability to lift up to 75lbs occasionally and 20lbs - 50 lbs frequently).
  • Must have successfully completed a Red Seal (Journeyman) Certification with 4 years post-apprenticeship experience.
  • Basic FST, TrainCAN Certified is preferred; WHMIS (GHS), and first aid certification required
  • Ensure that proper procedures are followed for food preparation in regards to time, temperature as well as health and safety control systems.
  • Prepare modified or special diet items per special requests
  • Ensure adherence to all recipes, specifications and portioning standards
  • Ensure that all smallware items, knives, and utensils are cleaned and properly stored after each use.
  • Assist with food preparation/stocking/cleaning as required, helping other stations if needed.
  • Instructs and directs other staff in cooking techniques, food safety or other methodologies as required.
  • Ensure that all logs, sampling, or other documentation as required by Management is completed in accordance the appropriate frequency
  • Mentor, lead, teach and coach other employees to ensure that proper procedures for food preparation are followed in regards to time, temperature, as well as health and safety control systems providing direction and instruction to other staff as required.
  • Communicates with other employees to ensure all required tasks are completed during their shifts

 

Qualifications

  • Must have successfully completed a Red Seal (Journeyman) Certification with 4 years post-apprenticeship experience
  • Previous supervisor experience in a related role preferred
  • Experience as a cook or related role required
  • Ability to work independently with limited supervision required
  • Proven knowledge of the basic principles of food preparation, various cooking methods, and food safety regulations such as proper food handling, sanitation, and storage
  • Food safety certification required
  • Demonstrates basic math and counting skills
  • Demonstrates effective interpersonal and communication skills, both written and verbal
     

This role may have physical demands including, but not limited to, lifting, bending, pushing, pulling and/or extended walking and standing. This role may also require uniforms and/or usage of Personal Protective Equipment (PPE).
