As an Executive Chef, you will be responsible for the culinary vision and overall food service operations across multiple dining locations on a major university campus in the Quebec City region. You will play a key role in developing innovative food offerings, optimizing operations, and promoting sustainable practices, while maintaining the highest standards of quality, safety, and customer satisfaction.
Job Responsibilities
- Supervise culinary operations across multiple locations and ensure compliance with quality standards and operational excellence.
- Develop innovative, balanced menus tailored to the needs of a diverse clientele.
- Manage menu planning, cost control, and pricing strategies.
- Oversee purchasing, inventory management, receiving, and food production activities.
- Plan, manage, and monitor operating budgets.
- Control food and labor costs to ensure efficient resource management.
- Actively contribute to the development of sustainable and responsible culinary initiatives.
- Lead, motivate, and develop the skills of the culinary team.
- Identify training needs and support employee development and talent growth.
- Conduct culinary presentations and cooking demonstrations during special events.
- Ensure the production of high-quality food in a high-volume environment.
- Promote a culture of health and safety where employee well-being is a top priority.
- Contribute to the continuous improvement of operations and perform other related duties as required.
Qualifications
- 4 to 5 years experience in a high-volume food service or restaurant environment
- Bilingualism in French and English is considered an asset, as the position operates within a primarily English-speaking university environment.
- Knowledge of MS Office suite
- Excellent leadership skills
- Demonstrate rigor and method in daily work.
- Certificate in hygiene and sanitation from MAPAQ
- Diploma in food service management/dietary technology/DEP in institutional cooking
