Reporting to the Catering Manager, the Catering Sous Chef works with the Executive Chef and oversees the day-to-day operations for the Catering operations on Carleton University campus. This involves planning, organizing, directing, controlling and evaluating the operation, and managing staff.

Salary Range
$55,000 - $60,000 + Benefits and Pension options
Job Responsibilities
• Oversee and manage aspects of theo perations and provide hands on culinary support
• Provide support to management and assist with human resources processes as required
• Ensure quality, courteous service is provided to all customers
• Ensure that food and service meet quality control standards
• Responsible for inventory controls, food, labor, direct costs, and monitoring revenues
• Assist in staff training, onboarding and scheduling
• Oversee the requisition and purchase of all food products
• Menu development and planning
• Preparation of budgets and maintaining food costs and other records
• Monitor compliance and ensure proper documentation of Food Safety, Food Production, and Health & Safety standards in accordance with company, provincial, and federal regulations
• Maintain tracking system (PRIMA) for all Food Safety and Food Production documentation in accordance with company, provincial, and federal regulations
• Supervise and coordinate special functions for internal and external clients and groups
Qualifications
• Post-secondary culinary diploma or degree is required. Red Seal certification is preferred
• Minimum 2 years’ experience in a culinary supervisory role
• Previous Catering experience is preferred
• Knowledge of Microsoft Word, Excel and PowerPoint
• Ability to analyze and interpret financials
• Effective communication skills, bilingualism in English and French is an asset
• Well-developed interpersonal skills
• Experience managing in a unionized environment is an asset
