Job Responsibilities

•    Responsible for culinary production of our proprietary healthy, hot, and cold stations
•    Select and develop recipes as well as standardize production recipes to ensure consistence
•    Manage a Sous Chef and brigade of cooks ensuring operational procedures are followed 
•    Oversee weekly menu planning from new or formulated recipes in our PRIMA database
•    Prepare and execute campus caterings for faculty, students and guests as required
•    Establish presentation techniques and quality standards, plan and price menus 
•    Estimate food consumption and remain within budget for food and labour costs
•    Conduct inventory, place orders, receive deliveries; reconcile orders as required
•    Train, manage and direct kitchen staff; coordinate all culinary related activities
•    Ensure proper equipment operation and maintenance; ensure proper safety and sanitation

Qualifications

•    Culinary degree of diploma and hospitality training is required 
•    Minimum 3-5 5 years culinary management experience is required
•    Previous experience managing a unionized staff is a definite asset
•    Advanced knowledge of the principles and practices within the food profession
•    Requires advanced knowledge of the principles and practices within the food profession
•    Well-developed communication and interpersonal skills to establish and maintain positive working relationships with clients, customers, staff and management

The pay range for this position is $65,000.00 - $70,000.00.
