Job Description

We are looking for talented Sous Chef to help our culinary team create memorable experiences in the Dining Centre. You will be responsible for the Day-to-Day operations and be fully engaged in creating a fun atmosphere with memorable experiences excelling in guest satisfaction.
To be successful as a Sous Chef, you should be someone who can keep a level head when working under pressure. The ideal candidate will be an excellent team player, willing to go the extra mile in pursuit of great food and exceptional service.

Job Responsibilities

•    Manage all activities in the kitchen, including food preparation and production, and management and training of kitchen staff
•    For each Shift, check the posted schedule for appropriate Staffing and that all Associates are present for their shift (Kitchen, Stewarding and F.O.H) follow up with Culinary Supervisors to verify this happens consistently. 
•    Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order
•    Ensure that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner
•    Assure adherence to all standards of food quality, preparation, recipes, and presentation in conjunction with the specifications
•    Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met and  Cooks always follow Food Hierarchy and Food Safety at their workstations and Food Storage areas. 
•    Food Products are Labelled and Dated accurately and legibly and stored appropriately. 
•    Assure kitchen personnel is trained in best cleanliness and sanitation practices
•    NO Menu Changes without prior communication and approval from Chef. 
•    Dietary issues are addressed, alternative options are available e.g., Gluten free buns/tortilla shells, Halal/Vegetarian options etc. as required. 
•    All Refrigerator and Freezer temperatures at F.O.H and B.O.H are recorded twice daily AM/PM. 
•    Food Quality, Temperature and Presentation is Optimal and in accordance with AHS and Aramark’s Health and Safety Standards for Each Meal Service. 
•    Display screens and Food labels (PID’s) are accurately describing Menu items being served at each station for each meal period. Address immediately if there are any changes. 
•    Pre-Start Inspection Checklist (As Needed). Station Cleaning Logs/Schedules. Day at a Glance Forms (Opening/Service/Closing).  Food Production sheets (Each Meal Period). 
•    Thermometer Verification is done twice weekly at huddles. 
•    Always maintain excellent Customer service (use the W.E.S.T acronym) and have a Positive Attitude towards Guests, Customers, Clients, and Co-workers. 


  • High school or GED equivalent required, 
  • Qualification from a culinary school - Red Seal Preferred
  • 3 – 5 year’s culinary experience in Catering, Banquet or Cook in Fine Dining in a high volume, hotel/restaurant kitchen preferred
  • environment and experience in a culinary leadership role preferred
  • Ability to communicate clearly with managers, kitchen and employees, and guests.
  • Safe Food Handling Certification
  • Ability to bend, stand, and stoop for long periods of time, and working long hours in hot conditions
